3 Lonely-Avocados-Pie

Oh what to do with those lonely avocados.

feeling isolated
They have sat on my table for too long. Not past their prime, but pretty darn close. I had good intentions.  Nachos with guacamole was the initial idea, but with all of the yummy CSA share stuff I am receiving, the nacho meal never happened. Have to stick with the seasonal veggies while I have them!
Because I never waste produce,  I had to use them.  I am all about desserts for the kids after school, so I figured I should probably incorporate these avocados somehow....
Then I remembered the "healthier" creamy, dreamy, chocolate mousse that I have made a couple of times. This dessert is so downright  good, you will not even notice the avocado. AT ALL. Avocado is actually a lot more versatile than people realize. It can be used in many baked goods as an excellent substitute for butter. I still get amazed when people get scared of the fat content. Loads of  mono-unsaturated fats. Translation: the good fats, the ones that can lower your cholesterol.
Back to the pie. I thought about just calling this pie " Healthier Chocolate Mousse". Yawn. It is now called 3-Lonely-Avocados Pie.
Best part about this recipe? 5 ingredients.
  • 3 lonely avocados
  • 4 medjool dates
  • 1/4 cup raw honey
  • 1 bag of Ghiradelli DARK chocolate chips
  • whole grain pie crust (store-bought, who has the time??)
Step 1: Dust off your food processor.
Step 2: Pile the first 4 ingredients into the bowl of your processor.

Scoop out your creamy base

Medjool dates- For anyone wondering what the heck a medjool date is. Just cut into small pieces and be sure to toss the inner seed. (This has been called "nature's candy". For sure a staple item in this household.)

The package....These are from Trader Joes. Any grocery store will have these. Check the produce section first. If not, check the nuts, seeds, and dried fruit area.

I use raw honey because it has more antioxidants. Get what you can. Any other honey is fine.

Ghiradelli. Get the dark chocolate.
Step 3: Blend/ chop/ process the heck out of it until it is an ultra-smooth pudding like consistency. Make sure that you stop your food processor every so often to scrape down the sides.
Step 4: Smooth it out onto your pie plate.

Love this crust. Whole grain. No hydrogenated stuff. Whole Foods has these or check your health food section at your grocery store.

creamy heaven
Step 5: Chill in the refrigerator for 2+ hours so that it will firm up.
Slice it up. Enjoy.
If you want to up the health factor even more, you can sprinkle some chia seeds and a few gogi berries on the top before you refrigerate.

Optional sprinkling of chia seeds and gogi berries. Love this combo.

Soooo thick and decadent.

This is not going to last long in this household. Hopefully fights do not break out.

My favorite smoothie and my least favorite smoothie

My mom made us be the guinea pigs of 25 smoothies for a cook book she was making for the kid zone at the Dempsey Challenge. Here are some of my opinions.

I love smoothies but some of them I hate. My least favorite smoothie is called banana carrot smoothie(recipe to follow) I hated the texture. It felt so weird and gross on my tongue. I thought I was going to get sick. It wasn't just the texture, it was also the taste. It tasted like someone ate a carrot and then puked it up. It looked like carrot mush. Sorry mom!
BANANA CARROT SMOOTHIE
1 frozen banana
1 cup of apple juice
1-2 cups baby carrots or chopped carrots
1 cup Greek yogurt (or any yogurt you like)

My favorite smoothie is called orange creamsicle smoothie. (recipe to follow) It was to die for (as my memere would say) It felt like heaven on earth. No lie! I loooooooooooved it! The texture was so creamy and smooth. I loved the color. It was like an orangey peachy color. I loved everything that was in it. Thanks mom!
ORANGE CREAMSICLE SMOOTHIE
2 cups vanilla nonfat yogurt
2 cups orange juice
4 cups frozen mango chunks
2 tsp vanilla
ENJOY!

Pumpkins need lovin year round

Whole Wheat Pumpkin Applesauce Muffins

So I am a pumpkin freak. Seriously...I put it in everything. Chili, oatmeal, pancakes, cookies, even spaghetti sauce. I definitely do not think of pumpkin as an exclusive fall veggie. Super packed with Vitamin A and beta carotene, this can of goodness is well worth the couple of dollars. This post is dedicated to Whole Wheat Pumpkin Applesauce Muffins, although I foresee many pumpkin recipes in the future. I am that narrow-minded. ♥
Lets begin by breaking down the title.
  • “Whole Wheat”. Whole wheat=whole grain. More vitamins, more fiber. More bang for your buck. Great starting point right there.
  • “Pumpkin”. Yes, it is an excellent source of vitamin A and beta-carotene, but did you know about the fiber content in pumpkin? Take a look at the back of your pumpkin can’s label. You might be pleasantly surprised. grams per 1/2 cup serving. This is the real kind. Not the fake fiber crap that is infused in Fiber One yogurt .
  • “Applesauce”. You just know with that ingredient right there that these muffins are screaming moisture. Yum....

Before getting started:
  • Make sure that you buy pumpkin and not pumpkin pie filling. Pumpkin pie filling has lots of extra sugar that is not needed. These will be sweet enough with the brown sugar and you will be adding your own spices...
  • The Applesauce- applesauce is applesauce right? WRONG. Chances are that if you buy a jar that just reads “applesauce” you are probably buying applesauce with high fructose corn syrup. Yuckers. In case you have been living under a rock (no offense, I am sure it is a very comfortable rock), CORN SYRUP IS EVIL.  When purchasing applesauce make sure it says “unsweetened applesauce”. Your body will not know the difference and will reap the health benefits
  • You will notice that I have walnuts as optional. I hope that you decide to keep these in the recipe. Walnuts have amazing health benefits. They are an excellent source of Omega 3 fatty acids, a super source of plant-based protein, an appetite suppressant, a stress reliever. The list could go on and on. I realize that many do not like nuts in their baked goods, I get it...its a texture thing. I know that my older son would freak if there were large chunks of walnuts in his muffins. My solution. I have a 4 cup mini food processor and I pulse those babies to a grainy powder in seconds. Blends in beautifully. No mini processor? You could also use a coffee grinder or your rolling-pin to break up large chunks. The consistency will not be quite as fine with a rolling-pin, but it would still help with the texture problems. Well worth the extra 15 seconds to throw those in to the recipe. Seriously amazing health benefits. Take the time.
Whole Wheat Pumpkin- Applesauce Muffins
2 cups whole wheat flour
1 teaspoon baking powder
1/4 teaspoon salt
2 teaspoons pumpkin pie spice
2/3 cup brown sugar, firmly packed
1/4 canola oil
3/4 cup unsweetened applesauce
1/2 cup canned Pumpkin (not pumpkin pie filling...)
1/3 cup milk of choice (any milk will work. I used vanilla soy milk, but you could use coconut, almond, etc. )
2 eggs, lightly beaten
1/4 cup ground walnuts (optional)
Directions:
  1. Preheat oven to 400. Use 12 paper muffin liners or spray your pan with non-stick spray.
  2. Whisk together the flour, baking powder, salt, pumpkin pie spice, and walnuts if you decide to use them. In another bowl, combine the brown sugar, oil, applesauce, pumpkin milk, and eggs. Mix well. Fold the pumpkin mixture into the dry ingredients. Stir until combined.
  3. Divide evenly into muffin pan. Bake 15-18 minutes or until the tops are lightly browned. Cool the muffin pan on a wire rack for 5 minutes before serving.
I heart pumpkin anything.

Devyn-....why I hate weekly morning lists

I hate mornings! My mom had us make list to keep us on track in the morning before school. I thought  that it would be easy but it is not. I have to wake up extremely early every day to get my list done and I still dont get it done. I never have time to do my hair because it is the last thing on my list. I never even complete the list so im forced to do my hair in the car on the way to school! I hate cleaning my room on saturdays, but my mom said to put on the list 5 minute room rescue. Thats what she calls picking up your room so you don't have much to do on saturdays, but it never works. I can't stand weekly morning list!

My kids are about to divorce me...

Zucchini has taken over my house.
I, like probably everyone else in the northeast that either: A) has a  garden or B) belongs to a CSA farm share, has a ridiculous amount of zucchini right now. A note about me.
I can't throw out vegetables. EVER. Even if I have 5 zucchinis sitting in my refrigerator and a random person off the street says, "I have this monstrous zucchini that I do not need, do ya want it???" My answer: "Yes, please"

My kids will divorce me for sure if I serve them one more zucchini dish. Add my veggie obsession to mealtime, and I guess I am asking for the heavy sighs. I still occasionally get the rolled eyes, but funny how there were no crumbs zucchini shreds left behind.

Here is one of the things I have been serving up at Zucchini Central. This was breakfast, 2 Sundays ago.

Zucchini Cheese Casserole
2 cups shredded zucchini (make friends with your food processor everyone!)
1/4 cup finely chopped onion
1 cup shredded light cheddar cheese mix
1 tsp dried basil
1 tsp sea salt
1 cup whole grain pancake mix (I used Buckwheat pancake mix, but any other would work)
3  egg whites
4 whole eggs
2 tablespoons olive oil

Preheat oven 350F.
Use cooking spray to coat a medium size round dish.

In a small bowl combine the eggs, egg whites, olive oil, salt and basil.
In a larger bowl combine the zucchini, onion, cheese and pancake mix.
Mix the egg mixture into the zucchini mixture. Mix well and transfer to pre-oiled dish.

Bake for 45-48 minutes or until cooked through and golden.

Crispy crust...

Hearty, healthy center.

Florida-Final days..

So I haven't even touched on the awesomeness of the condo that we have rented. For three years running, Regal Palms. www.regalpalms.com So great, So affordable. Most people when they go to Florida are all about "staying on Disney". While I am not opposed to that (and we have done it), here is what I have figured out for our family dynamic and why we do not even attempt the hotel thing any more:

WE NEED SPACE, so at the end of a long day or an exhausting vacation, everyone is not in everyone's face. We love each other, but after 12 hours at a park, its nice to send the kids to their bedroom.

These condos are so affordable and have sooo much space. A mere 20-30 minute drive away from the parks, and these condos are huge. Okay, that is three times now that I have mentioned the space, but I think it is an important feature given the per night rate. Think 4 bedroom 3 1/2 bathrooms for about $110 per night. Full kitchen, dishwasher, tv's in every room.  TV in the kids' room is such a treat for them...it doesn't take much.
There's more. The best part is the pool area:
  •  a cool, not overwhelming water slide (that excites your 3 year old and his 62 year old grandfather),
  • a lazy river (to float with your tube and have a conversation with your increasingly disconnected 10 year old daughter)
  •  a regular pool (for handstands, cheering stunts, and getting whacked in the head with a wild football toss)
  • a walk-out, beach-style pool for toddlers (so you can watch them and not hold them 100% of the time)
  • a hot tub (in case the weather bombs during your trip)
  • a dj
  •  a tiki bar
  • hair wrapping for the little lady in your life (way cheaper than downtown Disney)
  • ...ok I could go on and on and on....

Bottom line...
This place makes my family slow down
Family picture minus Landon. He was boycotting.  Not about to force a stubborn three year old.

Landon was nervous about this slide in the beginning, but was a pro by Saturday.

My older brother Keith and my nephew Bryce

Kyle and Devyn. Yes, they really were that happy to be hanging together

Jump rope contest. Corbin is the one closet to the dj. He did not win. Not his forte I guess.

All about the hair wrap

Food break

Good eats

Florida...Sunday=Illness

So you can't go on a trip without SOMEONE getting sick. Inevitable. That someone threw up three times the night before SeaWorld. Any guesses??? Little Landon. Yes, three times his little body popped into our room. Poor babes. Needless to say, I did not sleep much that night. The next morning he seemed fine but I opted to stay back at the condo with him instead of trekking to Sea World with the rest of the crew. The last thing this kid needed was a day cruising around a park in the heat. I seriously hated to miss SeaWorld. It is definitely one of my top parks. I seriously love the sea creatures. But, I have a love/hate relationship with the sharks. Fascinating yes, but who can really forget Jaws 3 where Jaws swims busts through that underwater tube/walkway thing and all of the SeaWorld people were freaking out? Remember that?Anyhow, the kids went for the day with my parents, Keith and Sam, and sat in the soak zone for any show that they could. Fun. We did manage to have a pretty chill day. Landon had a three hour nap, recovered perfectly, so Kyle and I took him to the pool for an hour. Rounded up the day with Starbucks caramel frappuccinos. mmmm

Magic Kingdom

Never an easy in or out, but definitely worth the effort and exhaustion. We began our day with a plan and a mission. You kind of have to at Disney, or the day gets away from you and you wind up logging some serious time in line. We decided to make sure that we always had a Fast Pass in hand. If you are not familiar, a Fast Pass is a ticket  available on select rides. When you have this ticket it allows you to get in the “fast lane” (you still have to wait, but the only difference is that you don't lose feeling in your feet) . In other words, the Fast Pass lane allows you to get on the ride in a fraction of the time of the regular line.
As soon as we had come into the park, we got the typical picture in the front of the "Mickey Lawn" for my mother (her thing) and then Kyle and my father shot ahead to go get our first Fast Pass. They did not wait for us. I was totally okay with this. No more waiting for each other. If we did, I swear we would never have left Main St. After Animal Kingdom a couple of days prior, we were all set with waiting-politely-for-people-to-go-to-the-bathroom and just let them shoot ahead. As always, it was packed, but even with strollers we did a pretty good job getting through the park. Really, when is Disney not packed? A lot of walking, proud to say that my choice of flip flops was a good one. You never know with that sort of thing.
Kids did great. No huge meltdowns, although I almost had a few tantrums/panic attacks trying to look for an iced coffee or some sort of mocha frothy caffeine-y thing. Not sure why Disney does not market this better? That has always been my one small issue with Disney. Really, how many frozen chocolate covered-banana carts do they need?  Surely I can't be the only one desperately looking? I did eventually find a place near the Tea Cups. Ironically, the ride that I avoid.  I wanted to hop over the counter and hug the poor guy.
Overall, a great day.
We got to do a handful of rides including the President’s Hall (for Corbin, my Presidential trivia nut). Regarding this show: I am officially a grown up. I remember being so bored with the Disney President’s Show when I was younger. Now? Thoroughly impressed. Devyn was all about Space Mountain. Corbin, Splash mountain. I forced a reluctant Landon on Splash Mountain but he was pretty psyched once he was on.
One small disappointment in the Haunted Mansion: Why did they take out the spooky ghost mirrors at the end? Not a big deal, just wondering...
The day was complete with the final parade. We were in a great spot right near the exit. We got “spoken to” at a few times for blocking the trash cans, but hey, the Parade Patrol was just doing their job right? That parade is seriously the best way to end the day. Something about the dark of the night, the lights on the floats. Perfect.
By the end of our tram ride back to our lot we were all filthy, smelled like amusement park and ready.  Kids were asleep before we had even hit the road. We did manage to find a quaint wine bistro on the way home, 7-Eleven, that had the best wine and chips for purchase. Great night cap. One thing...where the heck have all of the Disney characters gone?? No sightings all day, other than the parade....

Orlando trip: An interview with a 3 year old

So our third day rained which actually worked ok. We had a few little errands to do. Errands? In Orlando? What could we possibly have to do for errands you ask? Last year we stumbled upon this massive M&M store at the Orlando Mall. Totally fun with large M&M dispensers along the wall. Dentist's nightmare. Anyhow, Devyn was asking before we had even left Maine if we could go to the mall again. Of course I said "no, we are not going to a mall again on vacation. Last year was a fluke thing, Devyn." Well, we wound up back at the mall. And then the Rainforest Cafe in Downtown Disney that night.

Here is my Q and A with Landon on this rainy “catch up” day. I wrote his exact response, so yes, it is grammatically incorrect.
Me= Green Landon= Black
About his morning...
What did you do when you first woke up?
I did get dressed.
What did you have for breakfast?

After the mall...
What did you see at the mall?
I saw M&M’s and I saw numbers.
After Downtown Disney and Rainforest cafe...
What did we do at Rainforest cafe?
We saw thunder. Elephants, butterflies. There was a butterfly. Fruit. And some more fruit.
Anything else?
Two animals left. Parrot and another parrot

Out like a lion...Animal Kingdom day through Devyn's eyes

Devyn’s blog of day two
At 8:15 we went to Animal Kingdom.  The first thing we did was see a show.  The show was called It’s Tough to be a Bug.  It was in 4-D.  4-D is in 3-D with special effects.  The show was really cool.  All of the babies were crying so they went outside.  Next we went on a safari ride.  My favorite animal we saw was an okapi. An okapi is part zebra and part giraffe.  After that we saw two gorillas.  One of the gorillas came up close to the glass.  It was so close that my memere got a picture of it’s butt.  Everyone was really hungry so we got something to eat.  I had a cheeseburger.  When everyone was full we went on a roller coaster.  It was scary at first, but once it was over I wanted to go again, but I didn’t. It was 199.5 feet tall.  The only bad thing about it was that we had to wait an hour in line. It was in a mountain.  After we went on a water ride.  It was called the Kali Water Rapids.  I got so wet.  It started to rain so we took cover in a dino gift shop.  I got a necklace with a mickey mouse charm on it.  When the storm ended we went home. We had pasta for dinner . Then I watched t.v. and went to bed.

Devyn and her Matante Sam on our safari ride through faux Africa

A few other pictures from our day....
Corbin's caterpillar pal that tagged along with us for a little while. This little guy was the key to slowing Corbin down.  Corbin was always 200 yards ahead, while we were trapped amongst a sea of strollers.

                                                                 My Mother and Landon.

Hard to see, but there is a gorilla back there.

Corbin's post- day 1

Corbin needs quite a bit of stimulation. He polished off the two books that I packed him while we were waiting...in PORTLAND (figures), so he needed something to do. I put him to work on the family blog. Here is his take. By the way, in regards to the caps lock on Corbin's blog: I refuse to edit the kids' posts because I want things to remain as authentic as possible. He insists on all caps. Must be his bigger is better philosophy shining through.
